Baked Roast Lamb

The lamb roasted in the oven is a traditional dish rooted in the Basque Gastronomy.

In Ellauri it is the inevitable result, together with cheeses and curds, of the secular tradition of sheep grazing in the Gorbeia,

We roast the lamb in an oven at low temperature, at about 70ºC for around 10 hours, which results in a juicy meat with all its flavor.

We offer a menu of a quarter of suckling lamb, weight of a kilo and a half, to share for two people.

It is necessary to book one day in advance.
