Oven roasted lamb “Ellauri”

Oven roasted lamb is a traditional dish deeply rooted in Basque cuisine.

 

In Ellauri, the lamb is a must, derived from the secular tradition of sheep grazing from the Gorbeia Valley, along with other traditional products from this animal, such as cheese or junket.

 

For the elaboration of this menu, we roast the lamb in the oven at low temperature (aproximately 70ºC) for around ten hours, which results in a very juicy meat that concentrates all its flavor.

 

We offer a menu that is made up of a quarter of suckling lamb of kilo and a half of weight, to share for two people.

 

This menu includes:

  • Appetizer
  • Gorbeia Latxa lamb roasted at low temperature
  • Lettuce and chives salada
  • Curd or Idiazabal cheese
  • Water and bread
